I have baked a bunch of loaves (12) now using the 5-minute artisan bread method, and I think I’m starting to get pretty good at it. At least I thought I was starting to get pretty good at it – I’ve made a bunch of loaves for our family, and some to take to friends, who have all enjoyed the bread. My parents even liked it. However, tonight I was thinking of branching out, and was looking on the Internet for more artisan bread recipes. Did you know what? There’s no such thing as an artisan bread recipe. Real bakers use formulas expressed as ingredients as percentages of total flour weight. Apparently they do it this way so that formulas can be scaled up and down to match the need for specific orders, etc. And there are lots of techniques. LOTS of techniques. And here I was feeling like a pro baker. Keep trying. Keep trying.
